Delish! I got the original recipe here, but, I changed some things up :)
My Recipe:
2-3 chicken breasts cooked & seasoned to your liking
3 cups of cooked rice (I used jasmine rice)
Ham lunch meat, about 1/2 lb
Swiss cheese slices, about 1 package
2 cans reduced fat cream of chicken soup
1/2 cup low fat milk
1/2 cup fat free sour cream
Breadcrumbs, or 15 saltine crackers crumbled + 1/2 tsp paprika & 1/2 tsp garlic
Preheat oven to 350. Mix the soup, milk & sour cream in a bowl, combine with rice* and place in a greased 9x13. Add 6 slices of swiss. Then, layer the cooked chicken. Next, chop the ham and layer on top of the chicken. Add another layer of swiss cheese, and then the breadcrumbs or saltine cracker crumbles. Bake uncovered for about 45 minutes.**
*The first time I made this, I followed the directions per the original recipe and some of the rice got crunchy from not enough moisture.
**I found when we baked it for 30 minutes, it just heated it through, but did not make it really hot and bubbly. Adjust cooking time for your altitude :)
